How To: Make the yummiest and healthiest Brownies around!

Let’s raise up a cold cup of milk to our sweet tooth! This week I’m showing you my favorite healthy brownie recipe I found. These fabulous brownies are vegetarian, wheat-free, gluten-free, and dairy free! Don’t let all of that scare you because these brownies taste delicious! They are extremely gooey, rich, and chocolatey. I found this recipe in a book called, “The Healthy You Diet” by Dawna Stone.

In her book she calls this dessert, Triple Chocolate Brownies.

2 tablespoons flax meal

6 tablespoons water

7 tablespoons coconut flour

1/4 cup unsweetened cocoa powder

1/2 teaspoon sea salt

1/4 teaspoon baking soda

1/2 cup coconut oil

1 1/4 cups gluten-free dark chocolate chips

2 ounces high-quality gluten-free unsweetened chocolate, coarsely chopped

1/2 cup honey

1 teaspoon vanilla extract

Here’s how you make them:

Step 1 ~ Preheat oven to 350 degrees Fahrenheit.

Step 2 ~ Line the bottom of an 8″ x 8″ baking pan with parchment paper and lightly oil the sides of the pan.

Step 3 ~ In a small bowl, combine the flax meal and water, stir well, and set aside for 10 minutes to thicken.

Step 4 ~ In a mixing bowl, combine the coconut flour, cocoa, salt, and baking soda. Whisk until well mixed.

Step 5 ~ In a small saucepan over low heat, heat the oil, 1 cup of the chocolate chips, and the chopped chocolate, stirring constantly (you don’t want the chocolate IMG_4053to burn!), until the chocolate melts.

Step 6 ~ Remove the pan from the heat and stir in the honey and vanilla.

Step 7 ~ Add the reserved flax mixture and whisk to mix thoroughly.

Step 8 ~ Pour into the dry ingredients and mix well. (It’s going to be extremely gooey and that’s totally normal!) 

Step 9 ~ Pour the batter into the pan and sprinkle with the remaining 1/4 cup chocolate chips.

Step 10 ~ Bake for 15 minutes, then cool for 15 minutes!

*Makes approximately 12 brownies

*Total time should take about 35 minutes plus cooling time

Again, this is a recipe I found from Dawna Stone. It’s not one I came up with, but I love her healthy brownies! I’m always looking for recipes to turn my favorite desserts into healthier renditions and of course, above all, they must pass my taste test before I share them with you.
